Salmon, Shrimp, Cheesy Broccoli with Corn

1 lb (450g) fresh salmon fillets

1 lb (450g) large shrimp, peeled and deveined

2 cups broccoli florets

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

½ cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with cooking spray or olive oil.

    In a large pot, bring water to a boil. Blanch the broccoli florets for 2-3 minutes until slightly tender, then drain and set aside.

      In a mixing bowl, combine the cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well blended.

        In the prepared baking dish, arrange the salmon fillets and season with a little salt and pepper. Scatter the shrimp around the salmon.

          In a separate bowl, mix the blanched broccoli and corn kernels into the cheese mixture. Spoon this mixture over the salmon and shrimp evenly.

            Drizzle olive oil over the entire dish for added flavor and moisture.

              Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the salmon is cooked through and the cheese is bubbly and golden.

                  Remove from the oven and let it sit for 5 minutes before serving. Garnish with fresh parsley if desired.
