1 can (14 oz) wild-caught salmon, drained and flaked

1 cup breadcrumbs (use panko for extra crunch)

2 large eggs, beaten

1/4 cup mayonnaise

2 green onions, finely chopped

1/2 cup red bell pepper, finely diced

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Olive oil, for frying

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, and beaten eggs.

    Add the mayonnaise, green onions, red bell pepper, Dijon mustard, Worcestershire sauce, and dill to the mixture.

      Season well with salt and pepper, and mix until all ingredients are thoroughly combined.

        Using your hands, form the mixture into small patties or croquettes, about 2 to 3 inches in diameter.

          Heat a generous amount of olive oil in a skillet over medium heat until shimmering.

            Carefully place the croquettes in the skillet, working in batches if necessary to avoid overcrowding.

              Cook for about 3-4 minutes on each side, or until golden brown and crispy.

                Once cooked, transfer the croquettes to a plate lined with paper towels to absorb excess oil.
