1 lb cooked salmon, flaked

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup finely chopped green onions

1/4 cup mayonnaise

1 large egg, beaten

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Oil for frying (olive oil or vegetable oil)

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, green onions, mayonnaise, beaten egg, dill, lemon juice, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

    Shape the mixture into small patties or croquettes, about 2-3 inches in diameter, and place them on a baking sheet or plate.

      Cover the croquettes with plastic wrap and refrigerate for at least 30 minutes. This will help them hold their shape during cooking.

        In a large skillet, heat about 1/4 inch of oil over medium heat.

          Once the oil is hot, carefully place the croquettes in the skillet, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy.

            Use a slotted spoon to remove the croquettes and drain them on a paper towel-lined plate.

              Serve the salmon croquettes immediately, garnished with additional dill or a wedge of lemon if desired.
