2 large russet potatoes, peeled and grated

1 teaspoon salt

1 tablespoon olive oil

1 cup shredded mozzarella cheese

1/2 cup marinara sauce

1/2 cup sliced bell peppers (mixed colors)

1/2 cup sliced mushrooms

1/4 cup chopped red onion

1 teaspoon dried oregano

1 teaspoon garlic powder

Fresh basil leaves for garnish

Instructions
 

Begin by preheating your oven to 425°F (220°C).

    In a large bowl, combine the grated potatoes and salt. Let them sit for about 10 minutes to draw out moisture, then squeeze out excess liquid using a clean kitchen towel.

      In a skillet, heat the olive oil over medium heat. Add the grated potatoes, pressing them into the bottom of the skillet to form a flat layer. Cook for about 7-10 minutes until the bottom is golden brown and crispy.

        Carefully flip the potato base using a large plate or spatula and cook the other side for another 7-10 minutes until crisp and firm. Transfer the base to a baking sheet lined with parchment paper.

          Spread the marinara sauce evenly over the crispy potato base, then layer the shredded mozzarella cheese on top.

            Distribute the sliced bell peppers, mushrooms, and red onion over the cheese. Sprinkle the oregano and garlic powder evenly over the toppings.

              Bake in the preheated oven for 15 minutes or until the cheese is bubbling and golden brown.

                Remove from the oven and let sit for a couple of minutes. Garnish with fresh basil leaves before slicing and serving.
