Ingredients

4 bone-in pork chops (1-inch thick)

4 tablespoons unsalted butter

3 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried rosemary)

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

1 tablespoon lemon juice

Fresh rosemary sprigs for garnish (optional)

Instructions

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt and pepper.

Make the Garlic Herb Butter: In a small bowl, combine the softened butter, minced garlic, chopped rosemary, and lemon juice. Mix until well combined.

Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they develop a golden-brown crust.

Add the Butter: Reduce the heat to medium-low and add the garlic herb butter to the skillet. Allow it to melt, then baste the pork chops with the melted butter using a spoon. Cook for an additional 4-5 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

Rest the Chops: Once cooked, remove the pork chops from the skillet and let them rest for 5 minutes. This helps to retain their juices.

Serve: Plate the pork chops and drizzle the remaining garlic herb butter from the skillet over the top. Garnish with fresh rosemary sprigs, if desired.
