Ingredients

1 cup fresh strawberries, hulled and halved

1 tablespoon honey (or maple syrup)

1 tablespoon balsamic vinegar

1 cup ricotta cheese

1 tablespoon lemon zest

2 tablespoons confectioners’ sugar

4 slices of whole grain or sourdough bread

1 tablespoon olive oil

Fresh mint leaves for garnish (optional)

Sea salt, to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Roast Strawberries: In a baking dish, combine the halved strawberries, honey, and balsamic vinegar. Toss gently to coat the strawberries evenly. Spread them out into a single layer and roast in the preheated oven for about 15-20 minutes, or until they are soft and caramelized.

Prepare Whipped Ricotta: While the strawberries are roasting, prepare the whipped ricotta. In a mixing bowl, combine the ricotta cheese, lemon zest, and confectioners’ sugar. Use a hand mixer or a whisk to whip until smooth and creamy. Adjust sweetness to taste.

Toast the Bread: Brush each slice of bread with olive oil and place them on a baking sheet. Toast in the oven for about 5-7 minutes until golden brown and crisp. You can also use a toaster if preferred.

Assemble the Toast: Once the bread is toasted, spread a generous layer of whipped ricotta on each slice. Top with the roasted strawberries and drizzle any remaining juices from the baking dish over the top.

Season and Garnish: Sprinkle a pinch of sea salt over the assembled toast for contrast and finish with fresh mint leaves for extra flavor and presentation.

Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4 slices

                - Presentation Tips: Serve the toast on a wooden board or a large plate. Arrange the toasts with a few extra roasted strawberries on the side and a small bowl of remaining mint leaves for garnish. Enjoy immediately for the best texture!
