4 ripe tomatoes

1 medium red onion, quartered

2 cloves garlic, unpeeled

2 jalapeños, halved and seeded (adjust based on heat preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

1 teaspoon smoked paprika

1 tablespoon olive oil

Instructions
 

Preheat your oven to 425°F (220°C).

    On a baking sheet, arrange the tomatoes, quartered onion, unpeeled garlic, and halved jalapeños. Drizzle with olive oil and sprinkle with a pinch of salt.

      Roast in the oven for 20-25 minutes, or until the tomatoes are blistered and the onion is tender.

        Remove the baking sheet from the oven and let the roasted vegetables cool for about 5 minutes.

          In a blender or food processor, combine the roasted tomatoes, onions, garlic (peeled), and jalapeños.

            Add chopped cilantro, lime juice, smoked paprika, and additional salt to taste. Blend until you reach your desired salsa consistency (chunky or smooth).

              Taste and adjust seasoning if necessary, then transfer to a bowl for serving.
