Roasted Peaches with Mozzarella

4 ripe peaches, halved and pitted

8 oz fresh mozzarella, sliced

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

¼ cup toasted walnuts, chopped (optional)

Fresh basil leaves for garnish

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large baking dish, arrange the halved peaches cut side up.

      Drizzle the olive oil evenly over the peaches, making sure to coat them well.

        Sprinkle salt, pepper, and thyme over the peaches for flavor.

          Roast the peaches in the preheated oven for about 15-20 minutes, or until they are tender and slightly caramelized.

            While the peaches are roasting, in a small bowl, mix together balsamic vinegar and honey to create a glaze.

              Once the peaches are done, remove them from the oven. Immediately place a slice of mozzarella on top of each peach half.

                Return the baking dish to the oven and roast for an additional 5 minutes, or until the mozzarella is melty and slightly golden.

                  Remove from the oven and drizzle the balsamic-honey glaze over the peaches and cheese.

                    If using, sprinkle the toasted walnuts on top for an additional crunch and garnish with fresh basil leaves.

                      Serve warm as an appetizer, salad topping, or dessert!
