2 lbs Yukon Gold potatoes, peeled and cubed

1 whole head of garlic

4 tablespoons unsalted butter

½ cup whole milk (or heavy cream for extra creaminess)

½ cup sour cream

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Cut the top off the whole head of garlic, exposing the cloves. Drizzle with a bit of olive oil, wrap in aluminum foil, and roast for about 30-35 minutes until the cloves are soft and caramelized.

      In the meantime, place the cubed potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook until the potatoes are tender (about 15-20 minutes).

        Once the potatoes are done, drain them and return them to the pot. Remove the roasted garlic from the oven and let it cool slightly. Squeeze out the roasted garlic cloves into the pot with the potatoes.

          Add the unsalted butter to the potatoes and garlic mixture. Begin mashing using a potato masher or a ricer for extra smoothness.

            Slowly pour in the milk (or heavy cream) and sour cream while continuing to mash until you reach your desired consistency. Adjust the milk amount based on how creamy you want the mashed potatoes to be.

              Season with salt and pepper to taste, and mix well. Remember to taste and adjust seasoning as needed.

                Serve hot, garnished with chopped chives or parsley for a burst of color.
