12 ounces pasta (like penne or fusilli)

1 pound Brussels sprouts, trimmed and halved

6 strips of bacon, chopped

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese

1/4 cup heavy cream

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped for garnish

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prepare Brussels Sprouts: On a baking sheet, toss the halved Brussels sprouts with olive oil, salt, and pepper. Spread them out in a single layer. Roast in the oven for 20-25 minutes, shaking the pan halfway through, until golden brown and tender.

      Cook the Pasta: While the Brussels sprouts are roasting, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

        Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes, stirring occasionally. Remove the bacon from the skillet and drain on paper towels, leaving the rendered fat in the pan.

          Sauté Garlic: In the same skillet, add minced garlic and red pepper flakes to the bacon fat. Sauté for about 1 minute, or until fragrant.

            Combine Ingredients: Add the cooked pasta to the skillet with garlic. Add the roasted Brussels sprouts and cooked bacon. Stir to combine.

              Add Cream and Cheese: Pour in the heavy cream and add the Parmesan cheese. If the mixture seems dry, gradually add some reserved pasta water until you reach your desired creaminess. Toss everything together for a minute over medium heat to combine well.
