Ingredients

1 pre-made pie crust (9-inch)

1 cup ricotta cheese

2 cups fresh spinach (washed and chopped)

3 large eggs

1 cup milk

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

2 cloves garlic (minced)

1/4 teaspoon nutmeg

Salt and pepper to taste

Fresh herbs for garnish (optional, like dill or parsley)

Instructions

Preheat the oven to 375°F (190°C).

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Season lightly with salt and pepper. Remove from heat and let it cool.

In a mixing bowl, whisk together the ricotta cheese, eggs, milk, Parmesan cheese, nutmeg, salt, and pepper until smooth.

Stir the cooled spinach mixture into the ricotta mixture, ensuring it's well combined.

Pour the filling into the pre-made pie crust, spreading it evenly.

Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.

Allow the quiche to cool for about 10 minutes before slicing. Garnish with fresh herbs if desired.

Serve warm or at room temperature. Enjoy your delicious quiche!
