Ingredients

1 lb fresh lump crab meat

1 lb shrimp, peeled and deveined

4 cups seafood stock

1 cup heavy cream

1 medium onion, finely diced

2 stalks celery, finely diced

1 carrot, finely diced

2 cloves garlic, minced

2 tbsp tomato paste

1 tsp smoked paprika

1 tsp cayenne pepper (adjust to taste)

1/2 cup dry white wine

3 tbsp all-purpose flour

4 tbsp unsalted butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Base: In a large pot, melt the butter over medium heat. Add the onion, celery, and carrot, cooking until the vegetables are soft and translucent, about 5-7 minutes. Stir in the garlic and cook for another minute until fragrant.

Add Tomato and Spices: Mix in the tomato paste, smoked paprika, and cayenne pepper, cooking for an additional 2 minutes. This will help deepen the flavors of the bisque.

Deglaze the Pot: Pour in the white wine and scrape any browned bits from the bottom of the pot. Let it simmer for about 2-3 minutes to reduce slightly.

Thicken the Bisque: Sprinkle the flour over the mixture and stir well to combine. Gradually pour in the seafood stock, whisking continuously to avoid lumps. Bring the mixture to a gentle simmer.

Incorporate Cream and Seafood: Reduce the heat to low and stir in the heavy cream. Add the shrimp and allow to simmer for about 5-7 minutes until the shrimp are cooked through and turn pink. Gently fold in the crab meat, being careful not to break it up too much.

Final Seasoning: Season the bisque with salt and pepper to taste. Allow it to simmer on low for another 5 minutes to meld the flavors.

Serve: Ladle the bisque into warm bowls, garnishing with chopped fresh parsley for a pop of color. Enjoy this rich and hearty dish!
