1 lb (450g) beef chuck roast, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

8 oz (225g) pasta (pennette or spaghetti works well)

1 cup heavy cream

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the skillet. Sear until browned on all sides, about 4–5 minutes. This step adds depth to the flavor.

    Prepare the Slow Cooker: Transfer the browned beef to the slow cooker. In the same skillet, add the chopped onion and garlic. Sauté for about 2–3 minutes until softened, scraping any browned bits from the pan, then transfer this to the slow cooker as well.

      Add Remaining Ingredients: In the slow cooker, add the diced tomatoes (with their juice), beef broth, Worcestershire sauce, dried basil, oregano, and smoked paprika. Stir everything together to combine.

        Cook: Cover the slow cooker and cook on low for 6–8 hours or on high for 3–4 hours, until the beef is tender.

          Cook the Pasta: During the last 20–30 minutes of cooking, bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

            Finish the Sauce: Once the beef is fully cooked and tender, stir in the heavy cream and grated Parmesan cheese to the slow cooker. Allow it to heat through for about 5–10 minutes.

              Combine Pasta and Sauce: Add the cooked pasta to the slow cooker, tossing gently to combine and coat the pasta in the creamy beef sauce. Adjust seasoning with additional salt and pepper, if necessary.

                Serve and Garnish: Spoon the rich and velvety beef pasta into bowls. Garnish with fresh chopped parsley and extra Parmesan cheese if desired.
