Ribeye Steaks with Blue Cheese Sauce

2 ribeye steaks (about 1 inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1 tablespoon unsalted butter

1/2 cup heavy cream

1/2 cup crumbled blue cheese

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)

Fresh chives, chopped (for garnish)

Prepare the Steaks: Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking. Season both sides generously with salt and black pepper.

    Cook the Steaks: In a large skillet, heat the olive oil over medium-high heat until shimmering. Add the ribeye steaks to the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. For perfect results, use a meat thermometer (130°F for medium-rare).

      Rest the Steaks: Once cooked, transfer the steaks to a plate, cover them loosely with aluminum foil, and let them rest for around 5-10 minutes to retain juices.

        Make the Blue Cheese Sauce: In the same skillet, lower the heat to medium. Add the butter and allow it to melt. Stir in the heavy cream, and bring to a gentle simmer.
