Ribeye Steak with French Onions and French Fries

2 ribeye steaks (about 1 inch thick)

2 large onions (yellow or white), thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves

1 teaspoon garlic powder

Salt and pepper to taste

4 large russet potatoes, cut into fries

2 tablespoons cornstarch

1 teaspoon paprika

1 tablespoon fresh parsley, chopped (for garnish)

Prepare the Fries: Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This helps make them crispy when fried. After soaking, drain and pat them dry with a towel.

    Coat the Fries: In a large bowl, combine the dried potatoes with cornstarch and paprika. Toss until evenly coated and set aside.

      Cook the Onions: In a large skillet, melt butter and olive oil over medium heat. Add the sliced onions and sauté for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown. Add fresh thyme, garlic powder, salt, and pepper to taste. Remove from heat and set aside.

        Fry the Potatoes: In a large pot or deep fryer, heat oil to 350°F (175°C). Carefully add the coated fries in batches and fry until golden brown and crispy, about 5-7 minutes. Use a slotted spoon to remove the fries, draining them on paper towels, and season with salt while they're hot.

          Cook the Steaks: While the fries are cooking, season the ribeye steaks generously with salt and pepper. In a separate skillet or grill pan, heat over medium-high heat. Add a little olive oil and place the steaks in the pan once it’s hot. Cook for about 4-5 minutes on each side for medium-rare, adjusting time based on your preferred doneness.

            Rest the Steaks: Remove the steaks from the heat and allow them to rest for about 5 minutes. This helps the juices redistribute throughout the meat.

              Serve: On a plate, place a ribeye steak, top with a generous scoop of the caramelized onions, and serve with a side of crispy fries. Garnish with chopped parsley for a pop of color.
