Ingredients

1 pound corned beef, chopped

1 can (14 ounces) sauerkraut, drained

1 cup Swiss cheese, shredded

1 cup rye bread, cubed (about 4 slices)

½ cup thousand island dressing

1 cup sour cream

1 teaspoon garlic powder

½ teaspoon black pepper

½ teaspoon onion powder

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat your oven to 350°F (175°C).

In a large mixing bowl, combine the chopped corned beef, drained sauerkraut, half of the Swiss cheese, cubed rye bread, thousand island dressing, sour cream, garlic powder, black pepper, and onion powder. Stir well until all ingredients are evenly incorporated.

Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

Sprinkle the remaining Swiss cheese on top of the casserole mixture.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden brown.

Once baked, let the casserole cool for a few minutes. Garnish with fresh parsley before serving.
