2 cups dried pinto beans (or black beans)

4 cups vegetable broth (or water)

1 small onion, diced

4 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil or lard

Salt to taste

Fresh cilantro, for garnish

Squeeze of lime juice (optional)

Soak the Beans: Rinse the dried beans thoroughly under cold water. Soak them overnight in a large bowl with ample water, or use a quick soak method by boiling them for 5 minutes, then letting them sit for 1 hour.

    Cook the Beans: Drain the soaked beans and place them in a large pot with the vegetable broth. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 1.5 to 2 hours until the beans are tender. If the liquid evaporates, add more broth or water as needed.

      Prepare the Base: In a large skillet, heat the olive oil (or lard) over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, ground cumin, smoked paprika, and cayenne pepper (if using), and cook for an additional 1-2 minutes until fragrant.

        Mash the Beans: Once the beans are cooked, drain them (reserve some liquid for later) and add them to the skillet with the onion mixture. Stir well to combine. Using a potato masher or fork, mash the beans to your desired consistency, adding reserved cooking liquid slowly until you reach your preferred creaminess.
