1 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon cocoa powder

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup vegetable oil

1 cup buttermilk

2 large eggs

2 tablespoons red food coloring

1 teaspoon vanilla extract

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup fresh strawberries, pureed

For Serving:

Fresh strawberries, sliced

Whipped cream

Grated chocolate or red velvet crumbs for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.

    Make the Red Velvet Base: In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, whisk together the oil, buttermilk, eggs, food coloring, and vanilla extract until smooth.

      Combine Mixtures: Gradually mix the wet ingredients into the dry ingredients until well combined and free of lumps. Pour the batter into the prepared cake pan, smoothing the top with a spatula.

        Bake the Base: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool completely in the pan before transferring to a wire rack.

          Prepare the Cheesecake Layer: While the red velvet cake is cooling, prepare the cheesecake layer. In a mixing bowl, beat the cream cheese until smooth and creamy. Gradually add powdered sugar and continue to mix, then add vanilla extract.

            Whip the Cream: In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.

              Add Strawberry Puree: Fold in the strawberry puree, being careful not to overmix. The mixture should be light and fluffy with lovely swirls of strawberry.

                Layer the Cheesecake: Once the red velvet cake has cooled, slice it horizontally into two layers. Place one layer on a serving plate, spread half of the cheesecake mixture on top, then place the second layer on top and spread the remaining cheesecake mixture. Smooth the top and sides.

                  Chill the Cake: Refrigerate the cheesecake delight for at least 4 hours or overnight, allowing it to set.

                    Serve: Before serving, garnish with fresh sliced strawberries, a dollop of whipped cream, and a sprinkle of grated chocolate or red velvet crumbs.
