1 box red velvet cake mix

3 large eggs

1/2 cup vegetable oil

1 cup water

16 oz cream cheese, softened

1/2 cup sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 cup powdered sugar

1 cup fresh strawberries, hulled and sliced

1/4 cup strawberry preserves

Optional: Fresh mint leaves for garnish

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.

    In a large mixing bowl, combine the red velvet cake mix, eggs, vegetable oil, and water. Mix until smooth and well combined. Pour the mixture into the prepared pan.

      Bake the red velvet cake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan, then remove the sides of the springform pan.
