1 box red velvet cake mix

3 large eggs

1/2 cup vegetable oil

1 cup water

16 oz cream cheese, softened

1/2 cup sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 cup powdered sugar

1 cup fresh strawberries, hulled and sliced

1/4 cup strawberry preserves

Optional: Fresh mint leaves for garnish

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan.

    In a large mixing bowl, combine the red velvet cake mix, eggs, vegetable oil, and water. Mix until smooth and well combined. Pour the mixture into the prepared pan.

      Bake the red velvet cake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan, then remove the sides of the springform pan.

        While the cake cools, prepare the cheesecake layer. In a large bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth and creamy.

          In another bowl, whip the heavy cream and powdered sugar until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.

            Once the cake is cool, spread a layer of the cheesecake mixture on top of the cake, smoothing it out with a spatula.

              In a small saucepan, gently heat the strawberry preserves until melted. Once warm, drizzle over the cheesecake layer.

                Top with fresh strawberry slices, arranging them attractively on top.

                  Refrigerate the cheesecake for at least 4 hours, or overnight for best results, to allow it to set.
