1 teaspoon cocoa powder

1 cup vegetable oil

1 cup buttermilk, room temperature

2 large eggs, room temperature

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

½ cup cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract (for the cream cheese frosting)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    In a medium bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. Set aside.

      In a large bowl, whisk together the vegetable oil and buttermilk until well combined.

        Add in the eggs, red food coloring, vanilla extract, and vinegar. Mix until smooth.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

            In a separate bowl, prepare the cream cheese mixture by whisking together the softened cream cheese, powdered sugar, and vanilla extract until smooth.

              Take a cupcake liner and scoop two tablespoons of the red velvet batter into it, followed by a dollop of the cream cheese mixture (about 1 teaspoon), then top with another tablespoon of the red velvet batter. Swirl with a toothpick to create a marbled effect.

                Repeat this process for each cupcake liner, filling them about ⅔ full.

                  Bake in the preheated oven for 18-22 minutes or until a toothpick inserted in the center comes out clean.

                    Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

                      Once cooled, frost each cupcake with the remaining cream cheese mixture if desired.
