1 box red velvet cake mix

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup powdered sugar (plus extra for dusting)

1/4 teaspoon salt

1/4 teaspoon baking powder

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the softened cream cheese and unsalted butter. Beat with an electric mixer until smooth and creamy.

      Add the eggs and vanilla extract to the cream cheese mixture. Beat until everything is well combined.

        Gradually add the red velvet cake mix to the wet ingredients, mixing until just combined. Don’t over-mix.

          Carefully fold in the powdered sugar, salt, and baking powder until the dough is uniform. The dough should be soft and slightly sticky.

            Use a cookie scoop or your hands to form balls of dough, approximately 1 tablespoon each.

              Place the cookie balls on the prepared baking sheet, spacing them about 2 inches apart.

                Bake for 10-12 minutes, until the edges are set but the centers are still slightly gooey. Do not overbake.

                  Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer them to a wire rack to cool completely.

                    Once cooled, dust the cookies with powdered sugar for an extra sweet touch.
