Ingredients

2 cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 cup vegetable oil

1 cup buttermilk, room temperature

2 large eggs

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

1 cup cream cheese, softened

½ cup powdered sugar

1 teaspoon vanilla extract (for frosting)

Fresh raspberries or strawberries for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In another bowl, mix vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and white vinegar until smooth.

Incorporate Mixtures: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.

Bake the Cakes: Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare Cream Cheese Frosting: In a mixing bowl, beat softened cream cheese with powdered sugar and vanilla extract until creamy and smooth.

Assemble in Jars: Once the cakes are completely cool, crumble them into small pieces. Layer the crumbled cake and cream cheese frosting in clean glass jars, starting with a layer of cake followed by frosting, until the jars are filled. You can alternate layers as desired.

Chill and Serve: Refrigerate the jars for at least 30 minutes to set. When ready to serve, garnish with fresh raspberries or strawberries on top.
