1 pound shrimp, peeled and deveined

3 cups cooked rice (preferably day-old)

2 tablespoons vegetable oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 cup frozen peas

2 green onions, sliced (for garnish)

2-3 tablespoons Cajun seasoning (to taste)

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and season with salt, pepper, and 1 tablespoon of the Cajun seasoning. Cook for 2-3 minutes until the shrimp turn pink and opaque. Remove from the skillet and set aside.

    In the same skillet, add the remaining tablespoon of oil. Sauté the diced onion and bell pepper for about 4-5 minutes until they're softened.

      Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.

        Stir in the cooked rice, breaking up any clumps. Mix well with the onions and peppers.

          Add the cooked shrimp back into the skillet along with the frozen peas. Stir to combine.

            Pour the soy sauce and Worcestershire sauce over the mixture, tossing everything together. Season with the remaining Cajun seasoning, adjusting to taste.

              Cook for an additional 2-3 minutes, allowing the flavors to meld and the rice to heat through.

                Garnish with sliced green onions and fresh parsley before serving.
