1 cup almond flour

1/2 cup powdered sugar, plus extra for dusting

1/4 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon almond extract

1/4 cup unsalted butter, softened

1 large egg white

1/2 cup raspberry jam (seedless recommended)

1/2 teaspoon vanilla extract

1/4 cup sliced almonds (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, powdered sugar, all-purpose flour, and salt until well combined.

      Cream Butter and Sugar: In a large mixing bowl, beat the softened butter, almond extract, and vanilla extract until light and fluffy. Gradually add the dry ingredients to this mixture, mixing until just combined.

        Incorporate Egg White: Add the egg white to the dough, mixing until fully incorporated. The dough should be slightly sticky.

          Chill the Dough: Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes, allowing it to firm up a bit for easier handling.

            Form the Cookies: Once chilled, scoop tablespoon-sized amounts of the dough and flatten them in your palm. Place about 1/2 teaspoon of raspberry jam in the center of each cookie and carefully fold the dough over the jam to encase it completely.
