1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup old-fashioned oats

1 cup fresh raspberries (or frozen, thawed)

½ cup brown sugar, packed

½ teaspoon cinnamon

½ cup chopped almonds or walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This usually takes about 2-3 minutes using an electric mixer.

      Add Vanilla: Add the vanilla extract and mix until combined.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, and salt.

          Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet ingredients, beating on low speed until just combined.

            Add Oats and Nuts: Stir in the oats and chopped nuts (if using) until evenly distributed in the dough.

              Prepare the Raspberry Filling: In a small bowl, gently toss the fresh raspberries with brown sugar and cinnamon until well mixed.

                Assemble the Cookies: Take about 1.5 tablespoons of cookie dough and flatten it slightly in your palm. Place about a teaspoon of the raspberry mixture in the center and wrap the dough around it to form a ball. Repeat with the remaining dough and raspberry mixture.

                  Bake: Place the cookies on the prepared baking sheets, spaced about 2 inches apart. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown but the centers remain soft.
