2 packs of instant ramen noodles (discard seasoning packets)

2 tablespoons vegetable oil

1 cup broccoli florets

1 carrot, julienned

1 bell pepper, sliced (any color)

1 small zucchini, sliced

3 cloves garlic, minced

1-inch piece of ginger, minced

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for non-vegetarians)

1 tablespoon sesame oil

1 teaspoon chili paste (adjust to taste)

Sesame seeds for garnish

Prepare the Noodles: Boil a pot of water and cook the ramen noodles according to package instructions, usually about 3 minutes. Drain and rinse them under cold water to stop the cooking process. Set aside.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Sauté the Vegetables: Add the minced garlic and ginger to the skillet, stirring quickly for about 30 seconds until fragrant. Next, add the broccoli, carrot, bell pepper, and zucchini. Stir-fry for 3-4 minutes, or until the vegetables are tender yet crisp.

        Combine Noodles and Sauce: Add the cooked ramen noodles to the skillet with the sautéed vegetables. Pour in the soy sauce, oyster sauce (if using), sesame oil, and chili paste. Toss everything together with tongs or a spatula to better combine. Stir-fry for an additional 2-3 minutes until everything is heated through.

          Finish and Serve: Remove from heat and stir in the chopped green onions. Serve hot, garnished with sesame seeds on top.
