1 cup elbow macaroni

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 pound ground beef (or turkey for a lighter option)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes, with juices

2 tablespoons chili powder

1 teaspoon cumin

½ teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Optional toppings: sour cream, chopped green onions, jalapeños

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Brown the Meat: Add the ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Mix in the Chili Components: Add the drained kidney beans, diced tomatoes, chili powder, cumin, paprika, salt, and pepper to the skillet. Stir everything to combine and let simmer for about 5 minutes, allowing the flavors to meld.

          Combine with Pasta: Gently fold the cooked macaroni into the chili mixture, stirring well to ensure even distribution. Let it cook together for another 2-3 minutes.
