Quick and Creamy Mushroom Soup Without Dairy

500g fresh mushrooms, sliced (button, cremini, or a mix)

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (full-fat for creaminess)

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: a squeeze of lemon juice for brightness

Instructions
 

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.

    Add the minced garlic and sauté for another 1-2 minutes until fragrant.

      Stir in the sliced mushrooms and cook until they release their juices and become tender, about 5-7 minutes.

        Sprinkle in the dried thyme, salt, and black pepper, stirring to combine the flavors.

          Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat and simmer for 10 minutes to allow the flavors to meld.

            Remove the pot from heat and use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a countertop blender, then return it to the pot.

              Stir in the coconut milk, mixing thoroughly. Adjust seasoning with more salt, pepper, or a squeeze of lemon juice to taste.

                Return the pot to low heat, warming the soup gently for 5 minutes before serving.
