2 cups shredded Monterrey Jack cheese

1 cup crumbled queso blanco or feta cheese

1 cup whole milk

1 tablespoon cornstarch

1 tablespoon butter

1 small onion, finely chopped

2 cloves garlic, minced

1 jalapeño, seeded and finely diced (adjust to taste)

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium bowl, combine the shredded Monterrey Jack cheese, crumbled queso blanco (or feta), and cornstarch; toss to coat the cheese with cornstarch. This helps create a smooth queso.

    In a saucepan over medium heat, melt the butter. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Stir in the minced garlic and diced jalapeño, cooking for another 2 minutes until fragrant.

        Pour in the whole milk, stirring frequently, until it's heated through but not boiling.

          Gradually sprinkle in the cheese mixture while continuously stirring until melted and smooth, about 3-5 minutes.

            Add ground cumin, chili powder, and season with salt and pepper. Mix well to combine.

              If the queso is too thick, add more milk until the desired consistency is reached.

                Remove from heat and pour into a serving bowl. Garnish with fresh cilantro.
