Ingredients
  

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked chicken, shredded (or cooked beef, beans for vegetarian option)

1/2 cup bell peppers, diced

1/2 cup red onion, finely diced

1/2 cup corn kernels (fresh or frozen)

1 tablespoon taco seasoning

Salt and pepper to taste

Cooking spray or olive oil

Optional toppings: sour cream, guacamole, salsa, chopped cilantro

Instructions
 

Preheat Oven/Air Fryer: If using an oven, preheat it to 400°F (200°C). For an air fryer, preheat at the same temperature.

    Prepare Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, bell peppers, red onion, corn, taco seasoning, salt, and pepper. Mix until all ingredients are well incorporated.

      Shape Tortillas: To form the cones, you can roll the tortillas around a cone-shaped object (like a metal cone mold) or simply use aluminum foil to create cone shapes. If using foil, shape a 12-inch square into a cone and wrap tightly.

        Fill Tortilla Cones: Generously fill each tortilla cone with the cheesy chicken and veggies mixture. Pack it tightly but leave a little space at the top.

          Secure the Cones: If needed, use toothpicks to secure the opening of each cone so the filling does not fall out during baking or air frying.

            Coat with Oil: Lightly spray the outside of each cone with cooking spray or brush with olive oil. This helps them become golden and crispy.

              Bake or Air Fry:

                - Baking: Place the cones upright in a muffin tin to keep them stable. Bake for 15-20 minutes, or until the cheese is melted and the tortillas are crispy.

                  - Air Frying: Arrange the cones in the air fryer basket vertically and cook for 10-12 minutes, checking halfway through for crispiness and doneness.

                    Serve: Remove the cones from the oven or air fryer and let them cool slightly. Serve warm with a side of sour cream, guacamole, salsa, and fresh cilantro.
