1 cup pumpkin puree (not pumpkin pie filling)

1 cup granulated sugar

1/2 cup light brown sugar, packed

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon pumpkin pie spice

1/2 teaspoon salt

For the Brown Butter Frosting:

1/2 cup unsalted butter

3 cups powdered sugar

2-3 tablespoons heavy cream

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Beat in the egg, pumpkin puree, and vanilla extract until well combined.

        In a separate bowl, whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

            Using a tablespoon or a cookie scoop, drop dollops of cookie dough onto the prepared baking sheet, leaving space between each cookie.

              Bake in the preheated oven for 15-18 minutes or until the edges are lightly golden and the centers look set. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                For the Brown Butter Frosting:

                  In a saucepan over medium heat, melt the butter, stirring constantly until it foams and turns a golden brown color, about 3-5 minutes. Be careful not to burn it.

                    Remove from heat and let the brown butter cool slightly.

                      In a mixing bowl, combine the brown butter with powdered sugar, heavy cream, vanilla extract, and a pinch of salt. Beat until smooth and creamy, adding more cream if needed to reach the desired consistency.

                        Once the cookies are completely cool, generously frost each cookie with the brown butter frosting using a spatula or piping bag.
