1 lb pulled pork (cooked and shredded)

4 medium potatoes, diced

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and black pepper to taste

3 tablespoons olive oil

4 large eggs

Fresh cilantro, for garnish

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

    Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally until they are golden brown and tender.

      While the potatoes are cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.

        Add the diced bell peppers to the onion and garlic mixture, cooking for an additional 5 minutes until they soften.

          Stir in the pulled pork, smoked paprika, cumin, salt, and pepper. Mix well and let it cook together for about 5 minutes so that the flavors meld.

            Once the potatoes are cooked, gently fold them into the pork and pepper mixture, stirring carefully to combine. Spread the hash evenly in the skillet.

              Create four small wells in the hash and crack an egg into each well. Cover the skillet with a lid and allow the eggs to cook to your desired level of doneness (about 5-7 minutes for runny yolks).

                Once the eggs are cooked, remove the skillet from heat and garnish the hash with fresh cilantro for a pop of color and flavor.
