Ingredients

For the Pretzel Bites:

4 cups all-purpose flour

1 packet (2 1/4 teaspoons) instant yeast

1 tablespoon brown sugar

1 teaspoon salt

1 1/2 cups warm water (about 110°F)

1/4 cup baking soda (for boiling)

Coarse sea salt, for sprinkling

1 egg, beaten (for egg wash)

For the Cheddar Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk

1 1/2 cups sharp cheddar cheese, shredded

1/2 teaspoon garlic powder

1/2 teaspoon mustard powder

Salt and pepper, to taste

Instructions

Prepare the Dough:

    - In a large bowl, combine flour, instant yeast, brown sugar, and salt. Gradually add the warm water, mixing until a dough forms. Knead for about 5 minutes on a floured surface until smooth. Cover with a damp cloth and let it rise in a warm place for about 1 hour or until doubled in size.

      Shape the Pretzel Bites:

        - Once risen, punch down the dough and turn it out onto a floured surface. Divide the dough into small pieces (about 1 inch each). Roll each piece into a small rope and twist into a bite-sized pretzel shape. Place shaped pretzels on a parchment-lined baking sheet.

          Boil the Pretzel Bites:

            - Preheat the oven to 425°F (220°C). Bring a large pot of water to a gentle boil and stir in the baking soda. Carefully drop the pretzel bites into the boiling water for about 30 seconds, flipping once. Remove with a slotted spoon and place back onto the baking sheet. Brush each with beaten egg and sprinkle with coarse sea salt.

              Bake the Pretzel Bites:

                - Bake in the preheated oven for 12-15 minutes, or until golden brown. Allow to cool slightly before serving.

                  Make the Cheddar Sauce:

                    - In a saucepan over medium heat, melt butter. Add flour and whisk for 1-2 minutes to create a roux. Gradually whisk in the milk, cooking until thickened (about 3-5 minutes). Stir in shredded cheddar cheese, garlic powder, and mustard powder. Cook until cheese is melted and sauce is smooth. Season with salt and pepper to taste.

                      Serve:

                        - Serve warm pretzel bites with the gooey cheddar cheese sauce for dipping. Enjoy your delicious homemade treat!
