4 large russet potatoes

1 cup sour cream

1 cup shredded sharp cheddar cheese

4 strips of bacon, cooked and crumbled

1/2 cup green onions, chopped (plus extra for garnish)

1/4 cup milk

2 tablespoons unsalted butter

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the russet potatoes clean and prick them several times with a fork.

      Bake the potatoes directly on the oven rack for about 45-60 minutes, or until they are tender when pierced with a knife.

        Once cooked, remove the potatoes from the oven and allow them to cool for about 10 minutes.

          Carefully slice each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving about 1/4-inch of potato on the skin.

            To the bowl, add the sour cream, half of the cheddar cheese, crumbled bacon, green onions, milk, butter, garlic powder, and season with salt and pepper.

              Mash all the ingredients together until creamy and well combined.

                Spoon the mixture back into the potato skins, mounding it slightly on top.

                  Top each stuffed potato with the remaining cheddar cheese.

                    Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                      Garnish the potatoes with additional chopped green onions before serving.
