4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup grated sharp cheddar cheese

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

4 green onions, chopped (for garnish)

1/4 cup crispy bacon bits (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Incorporate the minced garlic and dried thyme, cooking for an additional minute until fragrant.

      Add the diced potatoes to the pot, stirring to combine with the onions and garlic.

        Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are soft, use an immersion blender to puree the soup until smooth, or alternatively, transfer it to a blender in batches.

            Return the pureed soup to the pot and stir in the heavy cream and grated cheddar cheese. Heat over low until the cheese melts and the soup is heated through—be careful not to let it boil.

              Season with salt and pepper to taste. Adjust the thickness of the soup by adding more vegetable broth if necessary.

                Ladle the soup into bowls and garnish with chopped green onions and crispy bacon bits if using.
