4 medium russet potatoes, diced

1 cup bell peppers, chopped (use a mix of colors for visual appeal)

1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Optional: slices of sausage or bacon bits for added protein

Prepare the Potatoes: Start by washing and dicing the russet potatoes into small cubes for even cooking.

    Mix Ingredients: In a large mixing bowl, combine the diced potatoes, bell peppers, onion, garlic, oregano, paprika, salt, pepper, and olive oil. Toss everything together until the potatoes and vegetables are well coated with oil and spices.

      Prepare Foil Packets: Lay out large pieces of aluminum foil (about 12x12 inches) on a flat surface. Divide the potato mixture evenly onto the center of each foil sheet. If you're using optional sausage or bacon, sprinkle them over the top of the potato mixture.

        Seal the Packets: Fold the sides of the foil over the mixture and crimp the edges to create a sealed packet. Make sure there are no holes to prevent steam from escaping during cooking.

          Cook the Packets: Preheat the grill or oven to 400°F (200°C). Place the packets directly on the grill grates or on a baking tray in the oven. Cook for about 30-35 minutes, turning occasionally, or until the potatoes are tender.
