Potato, Broccoli & Pepper Jack Egg Casserole

4 medium potatoes, peeled and diced

2 cups broccoli florets

1 cup Pepper Jack cheese, shredded

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup chopped green onions (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.

    In a large pot of salted water, boil the diced potatoes for about 10 minutes, or until just tender. Drain and set aside.

      In a large skillet over medium heat, add a tablespoon of olive oil. Sauté the broccoli florets for 3-4 minutes until they are bright green and tender but still crisp. Remove from heat and set aside.

        In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          Layer the boiled potatoes evenly in the prepared baking dish, followed by the sautéed broccoli.

            Pour the egg mixture over the potato and broccoli layers, ensuring everything is evenly covered.

              Sprinkle the shredded Pepper Jack cheese on top of the mixture, distributing it evenly.

                Bake in the preheated oven for 35-40 minutes, or until the casserole is set and the top is golden and bubbly.

                  Once removed from the oven, let it cool for 5 minutes before slicing.

                    Garnish with chopped green onions before serving.
