4 large Portobello mushrooms, cleaned and stems removed

2 cups cherry tomatoes, halved

8 ounces fresh mozzarella, diced

1 cup fresh basil leaves, roughly chopped

2 tablespoons balsamic glaze

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: Red pepper flakes for heat

Preheat your oven to 400°F (200°C).

    In a mixing bowl, combine the halved cherry tomatoes, diced mozzarella, and chopped basil.

      Drizzle the mixture with the balsamic glaze, olive oil, and season with garlic powder, salt, and pepper. Add red pepper flakes if you desire a hint of spice. Gently toss to combine.

        Place the cleaned Portobello mushrooms on a baking sheet, with the gill side facing up.

          Generously fill each mushroom cap with the Caprese mixture, pressing down lightly to pack it in.

            Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese has melted.

              Remove from the oven and let them cool for a few minutes before serving.
