1.5 lbs pork tenderloin

2 tablespoons olive oil

Salt and pepper, to taste

2 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

1 cup chicken broth

1/2 cup heavy cream

3 tablespoons Dijon mustard

1 tablespoon whole grain mustard

1 tablespoon honey

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Prepare the Pork Tenderloin: Preheat your oven to 400°F (200°C). Trim any excess fat from the pork tenderloin and season it liberally with salt, pepper, minced garlic, rosemary, and thyme. Let it sit for about 15 minutes to absorb the flavors.

    Sear the Pork: In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the pork tenderloin and sear each side for about 4-5 minutes until golden brown.

      Bake the Pork: Once seared, transfer the skillet to the preheated oven. Roast the pork tenderloin for 20-25 minutes, or until it reaches an internal temperature of 145°F (63°C). Remove from the oven and allow to rest for 5-10 minutes before slicing.

        Make the Mustard Sauce: In the same skillet used for the pork, add the chicken broth and bring to a simmer over medium heat, scraping up any brown bits from the bottom. Reduce the broth by half, then stir in the heavy cream, Dijon mustard, whole grain mustard, honey, and apple cider vinegar. Simmer for another 5-7 minutes until the sauce thickens slightly.

          Serve: Slice the pork tenderloin into medallions and drizzle the mustard sauce generously over the top. Garnish with fresh parsley.
