Ingredients
  

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon butter

1 medium onion, finely chopped

8 ounces mushrooms, sliced (button or cremini)

2 cloves garlic, minced

1 cup chicken broth

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

1 tablespoon all-purpose flour

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Pork Chops: Season the pork chops generously with salt and pepper on both sides.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops to the skillet and sear for about 4-5 minutes on each side until they are golden brown and cooked through. Transfer the chops to a plate and cover to keep warm.

      Make the Gravy: In the same skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, approximately 3-4 minutes. Stir in the sliced mushrooms and cook until they are browned and their moisture has evaporated, about 5-6 minutes.

        Add Garlic: Stir in the minced garlic and sauté for an additional minute until fragrant.

          Create a Gravy Base: Sprinkle the flour over the mushroom mixture, stirring constantly for about 1 minute to cook the flour slightly. Slowly whisk in the chicken broth, Worcestershire sauce, and Dijon mustard, ensuring there are no lumps.

            Simmer the Gravy: Bring the mixture to a boil, then reduce the heat and let it simmer for about 5-7 minutes until the gravy thickens. Add the thyme and stir to combine. Adjust seasoning with salt and pepper as necessary.

              Combine Chops and Gravy: Return the seared pork chops to the skillet, spooning some of the gravy over them. Cook for an additional 2-3 minutes to heat through and let the flavors meld.

                Serve: Plate the pork chops and drizzle them generously with the mushroom gravy. Garnish with chopped fresh parsley before serving.
