Ingredients
  

4 bone-in pork chops (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 slices of bacon, chopped

1 small onion, finely diced

2 cloves garlic, minced

1 cup chicken broth or stock

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon chopped fresh parsley (for garnish)

Instructions
 

Prepare the Pork Chops:

    - Pat the pork chops dry with paper towels and season both sides with salt and pepper.

      Sear the Pork Chops:

        - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear them for about 4-5 minutes on each side until golden brown. Once seared, remove the pork chops from the skillet and set them aside on a plate.

          Cook the Bacon:

            - In the same skillet, reduce the heat to medium and add the chopped bacon. Cook until crispy, about 5-7 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, leaving the drippings in the skillet.

              Sauté the Vegetables:

                - Add the diced onion to the skillet and sauté for about 3-4 minutes until softened. Add the minced garlic and sauté for an additional 30 seconds until fragrant.

                  Make the Sauce:

                    - Pour in the chicken broth, stirring to deglaze the skillet and scrape up any browned bits. Bring it to a simmer and let it reduce by half, about 3-4 minutes.

                      - Lower the heat and add the heavy cream, Dijon mustard, and thyme. Stir well to combine and let it simmer for another 2-3 minutes until slightly thickened.

                        Combine Everything:

                          - Return the pork chops to the skillet, spoon some sauce over them, and cook for an additional 5-7 minutes or until the pork chops are cooked through (internal temperature should reach 145°F). If the sauce gets too thick, you can add a little more chicken broth to adjust the consistency.
