Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes, undrained

1 can (10.5 oz) cream of mushroom soup

1 cup frozen mixed vegetables (peas, carrots, corn)

2 cups cooked macaroni or pasta of choice

1 cup shredded cheddar cheese

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

1 tbsp olive oil

Optional: 1 cup crushed tortilla chips for topping

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

      Add the minced garlic and ground beef (or turkey) to the skillet. Cook until the meat is browned and crumbled, about 7-10 minutes. Drain excess fat if needed.

        Stir in the kidney beans, diced tomatoes, cream of mushroom soup, mixed vegetables, cooked pasta, chili powder, cumin, salt, and pepper. Mix until all ingredients are well combined.

          Transfer the mixture to a greased 9x13 inch baking dish. Spread evenly.

            Sprinkle the shredded cheddar cheese over the top. If using, add a layer of crushed tortilla chips for an extra crunch.

              Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.

                Let the casserole cool for a few minutes before serving. Enjoy!
