4 large potatoes, peeled and diced

1 large onion, finely chopped

2 cloves garlic, minced

2 carrots, diced

1 celery stalk, diced

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a vegan option)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced carrots and celery, cooking for another 3-4 minutes until they start to soften.

        Incorporate the diced potatoes into the pot and season with salt, pepper, and dried thyme. Mix well.

          Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce heat and simmer for about 20-25 minutes or until the potatoes are tender.

            Once the potatoes are cooked, use an immersion blender to blend the soup to your desired consistency. (You can also transfer it to a blender in batches, but be cautious with hot liquids.)

              Stir in the heavy cream and let the soup simmer for another 5 minutes to heat through. Adjust seasoning if necessary.

                Serve hot, garnished with chopped fresh parsley.
