1 tablespoon olive oil

1 medium onion, diced

2 garlic cloves, minced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes, undrained

2 cups vegetable broth

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

1 cup pepperoni slices

1 cup mozzarella cheese, shredded

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.

    Stir in the minced garlic and diced bell pepper, cooking for an additional 3 minutes, or until the peppers start to soften.

      Pour in the undrained diced tomatoes and vegetable broth. Stir well to combine.

        Add the dried oregano, dried basil, and red pepper flakes if using. Season with salt and pepper to taste. Bring the mixture to a gentle simmer and cook for 10 minutes to meld the flavors.

          Add the pepperoni slices to the pot and let simmer for another 5 minutes.

            Ladle the soup into bowls and top with a generous amount of shredded mozzarella cheese.

              Optionally, broil the soup in an oven-safe dish for a few minutes until the cheese is bubbling and golden.

                Remove from the oven (if broiled) and garnish with fresh basil leaves before serving.
