Ingredients

1 large flour tortilla

4 oz cream cheese, softened

2 tbsp pesto sauce

1/2 cup fresh spinach leaves

1/2 cup roasted red peppers, sliced

1/2 cup shredded mozzarella cheese

1/4 cup sliced black olives

1/4 tsp garlic powder

Salt and pepper, to taste

Optional: 1/4 cup crumbled feta cheese for a tangy twist

Instructions

Start by laying the flour tortilla flat on a clean surface.

In a mixing bowl, combine the softened cream cheese and pesto sauce until smooth and well incorporated.

Spread the cream cheese mixture evenly over the tortilla, leaving about 1 inch around the edges.

Layer the fresh spinach leaves over the cream cheese, followed by the roasted red peppers, shredded mozzarella, sliced olives, and garlic powder. If using feta cheese, sprinkle it on top as well.

Season with salt and pepper to taste.

Starting from one end, carefully roll the tortilla tightly into a log. Make sure to keep the fillings intact.

Once rolled, use a sharp knife to slice the log into 1-inch pinwheels. You should end up with about 10-12 bite-sized pieces.

Arrange the pinwheels on a serving platter and, if desired, drizzle with a little extra pesto or serve with a dipping sauce of your choice.
