Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream the softened butter, granulated sugar, and powdered sugar together until light and fluffy.

      Add the egg, lemon juice, lemon zest, and vanilla extract to the mixture. Beat until well combined.

        In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing just until combined.

            Gently fold in the raspberry or strawberry drink mix until the dough has a light pink hue. The amount can be adjusted depending on desired color intensity.

              Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, approximately 2 inches apart.

                If desired, sprinkle colored sugar or sprinkles on top of each cookie for a festive look.

                  Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

                    Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
