Ingredients
  

1 lb salmon fillet, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch cubes

2 bell peppers (red and yellow), cut into 1-inch pieces

1 small red onion, cut into wedges

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

Salt and pepper to taste

Wooden skewers (soaked in water for 30 minutes)

Instructions
 

In a medium bowl, whisk together the olive oil, soy sauce, honey, grated ginger, minced garlic, salt, and pepper until well combined.

    Add the salmon cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.

      While the salmon marinates, prepare your vegetables. Cut the pineapple, bell peppers, and red onion into 1-inch pieces if you haven't already.

        Preheat your grill to medium-high heat.

          Once the salmon has marinated, alternatively thread cubes of salmon, pineapple, bell peppers, and red onion onto the soaked wooden skewers, creating a kabob pattern.

            Place the kebabs on the grill and cook for about 8-10 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork, and vegetables are slightly charred.

              Remove the kebabs from the grill and let them rest for a few minutes before serving.
