For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

3 large eggs

1 cup crushed pineapple, drained (reserve juice)

1 cup coconut milk

1 teaspoon vanilla extract

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

For the Pineapple Whipped Cream Frosting:

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon pure vanilla extract

½ cup crushed pineapple, drained

Toasted coconut flakes, for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare the Cake Batter:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the eggs, one at a time, mixing well after each addition.

          - Stir in the crushed pineapple, coconut milk, and vanilla extract.

            Combine Dry Ingredients:

              - In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

                - Gradually add the dry ingredients to the wet mixture, mixing until just combined.

                  Bake the Cake:

                    - Divide the batter evenly between the prepared cake pans.

                      - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                        - Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare the Pineapple Whipped Cream Frosting:

                            - In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract.

                              - Beat on medium-high speed until soft peaks form.

                                - Gently fold in the crushed pineapple until well combined.

                                  Assemble the Cake:

                                    - Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of pineapple whipped cream frosting over the top.

                                      - Place the second cake layer on top and frost the top and sides of the entire cake with the remaining whipped cream.

                                        Garnish and Serve:

                                          - Sprinkle toasted coconut flakes over the top for decoration.

                                            - Chill the cake for at least 30 minutes before slicing to allow the flavors to meld.

Enjoy: Slice and serve your Pineapple Heaven Cake chilled. Each bite brings a tropical sweetness that'll whisk you away to paradise!
