1 package frozen pierogi (cheese or potato filling)

2 tablespoons olive oil

1 large onion, thinly sliced

3 garlic cloves, minced

1 pound kielbasa sausage, sliced into rounds

1 bell pepper, diced (any color)

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sour cream (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for about 3-4 minutes until they start to turn translucent.

    Add minced garlic and continue to sauté for another minute, being careful not to let it burn.

      Add the sliced kielbasa sausage to the skillet and cook for about 5-7 minutes until the sausage is browned and crispy.

        Stir in the diced bell pepper, smoked paprika, dried thyme, and season with salt and pepper. Cook for an additional 3 minutes, until the bell pepper is tender.

          In a separate pot, boil the frozen pierogi in salted water according to the package instructions (usually about 5-7 minutes), until they float to the top. Drain and set aside.

            Gently fold the cooked pierogi into the sausage and vegetable mixture in the skillet. Toss everything together to combine and allow the pierogi to warm through for about 2 minutes.

              Taste and adjust seasoning if needed, then remove from heat.

                Serve hot, garnished with fresh parsley and a dollop of sour cream on the side.
