2 large russet potatoes

1 lb thinly sliced ribeye steak

1 cup shredded provolone cheese

1 cup shredded mozzarella cheese

1 medium onion, thinly sliced

1 green bell pepper, thinly sliced

2 tablespoons olive oil

2 teaspoons garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional toppings: jalapeños, banana peppers, or sriracha sauce

Instructions
 

Prep the Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into thin strips to create fries. Soak them in cold water for about 30 minutes to remove excess starch, then drain and pat them dry.

    Make the Fries: Toss the potato strips with olive oil, garlic powder, salt, and pepper. Spread them out on a baking sheet lined with parchment paper in a single layer. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

      Cook the Steak and Veggies: While the fries are baking, heat a skillet over medium-high heat. Add a tablespoon of olive oil and sauté the sliced onion and green bell pepper until they're soft and slightly caramelized, about 5-7 minutes. Remove the veggies and set aside.

        Cook the Steak: In the same skillet, add another tablespoon of olive oil. Add the thinly sliced ribeye steak, season with salt and pepper, and cook for 3-5 minutes until just browned and cooked through.

          Cheese It Up: Once the fries are done baking, remove them from the oven and layer the cooked steak, sautéed onions, and peppers evenly over the fries. Sprinkle the provolone and mozzarella cheese generously on top.

            Melt the Cheese: Put the loaded fries back into the oven for an additional 5-7 minutes, or until the cheese is beautifully melted and bubbly.

              Garnish and Serve: Remove from the oven, garnish with fresh chopped parsley, and add any optional toppings of your choice. Serve immediately and enjoy your indulgent Philly Steak Cheese Fries!
